Are you a beginner quilter who wants to start with hand piecing rather than machine?
Have you tried English Paper Piecing? No?
What’s English Paper Piecing?
English paper piecing (EPP) is a technique of gluing fabric onto paper pieces before sewing them into intricate designs. Because EPP is done by hand, it makes a terrific on-the-go project.
Start with your chosen paper piece shape (hexagons are the most popular) and cut your fabric leaving a seam allowance around all the edges. Wrap the fabric edges tightly around the paper template, securing in place with glue. Place your pieces face to face. Whip stitch your pieces together, adding more as you go. Once you have completed your project, you can remove your papers out carefully. These papers can be reused. 
Hexagons work fantastically well with this technique, as do octagons, house papers, squares, triangles, diamonds and so much more. 
What can your project become? You can make something small like a dilly bag, a zip purse, a tote bag, appliqué embellishment on a plainer project, or something a bit bigger like a baby quilt or even a throw or quilt for the bed. 

You are only limited by your imagination.
Just add a glue pen, thread and needle and you are good to go!
